Pimento cheese is a Southern staple and has been integral to the history of the Columbia food scene. It's been suggested that the pimento cheeseburger was created at the Dairy Bar on South Main Street, and the first known recorded pimento cheese recipe in a cookbook hails from Columbia as well. Since then, Columbia chefs and home cooks alike have been finding new and interesting ways of incorporating “Southern caviar” into their dishes.
