There are a lot of ways to make a quick name for yourself on the food scene — basing your logo around a orange cat named Rambo is certainly one of them. Named after the owner’s own cat, Rambo’s Fat Cat Biscuits started late this summer and immediately became a popular stop thanks to their fun design and delicious sandwiches.
It’s actually insane that there never really has been a real biscuit vendor at the weekly Soda City market until Rambo’s Fat Cat Biscuits hit the scene. There have been different businesses bringing a few sandwiches here and there, but never one solely focused on the joys of biscuit making.
Fortunately Rambo’s are great. The biscuits are soft, buttery and flaky, yet sturdy enough to comfortably hold their contents without crumbling all over the place.
The menu changes daily. Classics like the bacon and egg are present, but there are also variations such as brie and fig jam and BLT along with specials such as the braised beef short rib with tomato jam and crispy onions.
While all of Rambo’s biscuit sandwiches are respectable, the sausage and chipotle pimento cheese has always been the standout. The patty has the perfect balance of herbs and spices, hitting all the right notes between the flaky biscuit and creamy pimento cheese. The chipotle in the pimento cheese gives it a hint of smokiness that make the sausage sing.
