5 large eggs
3/4 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1/2 teaspoon minced garlic
5 ounces sliced oyster mushrooms
1/4 cup dry white wine
4 ounces Swiss cheese, shredded
1 (9-inch) baked and cooled pie shell
Heat oven to 350 degrees. Whisk together the eggs, milk, salt and pepper.
Heat oil and saute garlic and mushrooms with the wine just until tender.
Drain the mushrooms and spread in the bottom of the pie crust. Pour egg mixture evenly over the mushrooms and sprinkle with the cheese.
Bake quiche for 25 to 30 minutes or until it is set and browned. Let stand for 5 minutes before slicing and serving.
