3 cups of thinly sliced unpeeled zucchini

1/2 cup chopped onion

1 tablespoon of vegetable oil for sauteing

4 eggs, slightly beaten

1/2 cup vegetable oil

1 1/2 cups of Bisquick

1/2 cup of grated Parmesan cheese

2 tablespoons chopped parsley

1 clove garlic, minced

1/2 teaspoon salt

1/2 teaspoon seasoned salt

1/2 teaspoon oregano

Pepper to taste


Heat oven 350 degrees. Grease a 13x9-inch baking pan.

Saute zucchini and onion in 1 tablespoon of oil until slightly cooked. In a bowl, mix vegetables with egg and oil. Add all other ingredients and mix well. Pour into pan and bake for 25 or 30 minutes or until top is golden brown.

Let stand for 10 minutes before cutting into squares.
