1 package of 2 frozen deep-dish pie crusts
1 egg yolk
1 tablespoon water
3/4 stick unsalted butter
2 cups firmly packed light brown sugar
3/4 teaspoon ground cinnamon
Scant 1/2 teaspoon ground nutmeg
Juice of 1 lemon
1 tablespoon minced fresh ginger
1 1/4 cups dried cranberries
3 large unpeeled Red Delicious apples (about 1 1/2 pounds), sliced
2 large unpeeled Granny Smith apples (about 1 pound), sliced
Thaw the pie crusts. With your fingertips, crimp the edge of one and put it back in the freezer. Pat the other one out flat. Cut out whatever decorative shapes you desire. Place them on a baking sheet lined with aluminum foil. Refrigerate for 30 minutes.
Preheat oven to 375 degrees. Prebake the frozen pie crust according to directions. Whisk the egg yolk with the water and salt. Brush it on the decorative pastry shapes and bake these also.Heat the butter in a large frying pan over medium heat. Add the sugar, cinnamon, nutmeg, lemon juice, ginger, and cranberries and stir to combine until the sugar dissolves. Add the apples and cook over medium heat until the apples are tender, but still have some body, 20 to 25 minutes.
Place the fruit in the pie shell. Place the pastry decorations on top. Serve hot or at room temperature. Great with vanilla or cinnamon ice cream.
