This salsa verde from Mex 1 Coastal Cantina provides a delicious hint of summer when the weather's still cool and rainy. This recipe makes enough of the tangy condiment to support a taco party.

Ingredients

8 quarts tomatillos, peeled

3 yellow onions, diced

4 jalapenos, diced

6 garlic cloves, minced

1/4 cup lime juice

1/4 cup sugar

1/8 cup salt

2 bunches cilantro, chopped

1/4 cup apple cider vinegar

Directions

Preheat oven to 350 degrees. Peel outer leaves off tomatillos. Spread on sheet tray and roast about 45 minutes, or until softened. Combine all ingredients in a food processor and pulse until smooth.
