Not every guest poses a challenge at the Thanksgiving table: Most holiday groups include at least one eager eater who’s happy to try a new dish, such as Shoba Kousik’s take on spaghetti squash.

“This is a great Indian touch to your traditional turkey,” Kousik says. “It adds a zing to fall.”

Plus, should any of your guests have dietary restrictions, the side dish is vegan and gluten-free.
