Every beer is fermented. But sometimes the brewer really, really wants you to know it.
Those fermentation-forward beers are the focus at the aptly named Charles Towne Fermentory (as for the first half of the name, it’s safe to assume nothing ever ages out of fashion for brewery owner Adam Goodwin.) A former New Englander, Goodwin acquired his brewing skills in Boston, Philadelphia and Nantucket.
“We have an approximately 465-gallon system that allows us to constantly experiment with different styles and recipes,” Goodwin says.
In the coming year, he adds, the Fermentory will install a prep kitchen and start pouring coffee.
For now, the brewery at 809 Savannah Highway is open Tuesday-Thursday, 4-11 p.m.; Friday-Saturday, 2 p.m.-12 a.m. and Sunday, 2-11 p.m. For more information, visit chsfermentory.com. The Fermentory hasn’t yet established a phone number.
