Matthew Schulz may have been the only local cheering the delayed onset of spring: The executive chef of the newly opened Bistro Toulouse specializes in French onion soup and cassoulet, a dish associated with the Mount Pleasant restaurant's namesake French city.

In addition to warming soups and stews, Bistro Toulouse is serving steak tartare, roasted chicken, shrimp provencale and bouillabaisse, among other all-weather starters and entrees.

Restaurant co-owners Schulz and Candice Mahala, who's serving as Toulouse's general manager, recently relocated to Mount Pleasant from northern Virginia. The two met in 2001 as students at the Culinary Institute of America. Located at 1220 Ben Sawyer Blvd., Bistro Toulouse is open from 5-10 p.m. every day but Monday.
