On March 1, the Cannonborough Beverage Company will release its first seasonal craft sodas for 2016 in three flavors: Citrumelo + Hops, Sorghum Thyme and Spiced Cranberry. They will be available online only.

In 2012, Mick Matricciano, Brandon Wogamon and Matt Fendley launched the Cannonborough Beverage Company. This small start-up company brought the farm-to-table procurement mentality to the production of small-batch sodas.

Grounded in the principals of “simplicity of flavors, quality of ingredients and adherence to seasonality,” the CannonBevCo team created a menu of sophisticated sodas made from fresh pressed local fruits (when possible), hand-picked herbs and a forced carbonation process that manages the fizz and acidity in the finished product.

Schooled on the culinary side and mentored by the Rayas at the Gin Joint and the craft cocktail early adapters in Charleston, this trio of “soda jerks” was recognized by Garden and Gun’s magazine “Made In The South Award” for beverages in 2015.

In 2016, by implementing the principles of bottle pasteurization, they increased shelf-stability (no need to refrigerate), moved beyond growlers and their “by the glass” program at local farmers markets and can now provide their all-natural, cocktail-quality sodas on tap and in the bottle to larger markets.

Citrumelo + Hops: Bright and slightly bitter, fresh pressed citrumelo juice combines notes of lemon and grapefruit. The soda is finished with the tropical bitterness of citra hops. The citrumelos are sourced from Cypress Hill Farms in Ridgeville.

Sorghum Thyme: Crisp and full bodied, the sorghum offers notes of baked apple and molasses. This soda finishes dry, with the faint herbaceousness of fresh thyme. The sorghum is sourced from Muddy Pond Mill, a family run, horse-powered sorghum mill in Tennessee.

Spiced Cranberry: Tart cranberry, warming spice notes and just a hint of lime blend smoothly in this light-bodied festive soda.
