Barsa's Mad Hatter cocktail

A craft cocktail designed by Barsa's mixologist and manager Brittaney Litton, inspired by garden tea parties shared with her mom and time spent cultivating an herb garden.

This drink demonstrates the "botany of booze" where plants play a major role in the nuanced flavor profile of the finished drink. Using locally distilled High Wire Vodka, Litton layers fruits, flowers and herbs to create a complex, refreshing and seasonal cocktail. Her libation reflects a Charleston garden where "whimsy and memory" play. Litton's combination of lemon and blueberry are enhanced with lavender and sage, adding floral and herbal notes to a vodka-based drink.

Readers of "The Drunken Botanist" by Amy Stewart will appreciate Litton's layered flavors where the botanical origins of beverages are celebrated. Cocktail geeks on the prowl for the latest craft combination will find their spring fling. Litton also suggests that those "looking for a craft cocktail but do not want sweetness" will enjoy the Mad Hatter.

Barsa Tapas Lounge and Bar will debut its new spring menu complete with Litton's cocktails this week. Barsa is at 58 Line St. The Mad Hatter will sell for $9 or $6 during daily Happy Hour from 4-7 p.m.

Brittaney Litton's testers describe this drink as "its tastes like spring," "it's herbaceous" and "I can make this cocktail with ingredients found in my own kitchen."
