Red palm oil, which featured prominently in the last Congolese recipe provided by Rose Mwamba, is back in this stewed dish of tomato and sweet potato leaves. But this time, flavor is also derived from Onga, a popular West African seasoning: It’s similar to dehydrated bouillon, except it runs long on turmeric and fenugreek.

Onga is available at African Market Groceries, 6585 Dorchester Road, Suite 101, which is across the street from a small tienda where Mwamba shops for produce. And influenced by her multicultural neighborhood, she’s also taken to buying tortillas there: She recommends wrapping them around matambele samaki for a satisfying meal.
