Tocino is a relatively simple dish, but it looms large in the childhood memories of some Filipino-American cooks, including Kitchen Cabinet contributor Jesse Stament.

“Filipino bacon is one of my favorite breakfast recipes,” Stament says, using the phrase that his household favored when referring to the sweet cured pork. “I can recall the excitement waking to the smell of (it), paired with garlic fried rice and over-easy eggs.”
