1 pound okra
3/4 cup blue cheese
3/4 cup cream cheese, softened
1 1/2 cups all-purpose flour, sifted
1 tablespoon sugar
6 tablespoons Abita beer (see cook's note)
6 tablespoons milk
1/4 teaspoon hot sauce
Salt and pepper
Vegetable or canola oil for frying

Starting just below the stem cap, slice okra in half lengthwise so halves remain attached. Mix blue cheese and cream cheese together and stuff a tablespoon or so into split okra. Push okra halves back together and set aside.
Combine flour, sugar, beer, eggs, milk, hot sauce and salt and pepper with whisk. Batter will be thick. Place okra in batter and turn until covered.
In a pot or deep skillet, pour oil 2 inches deep. Heat oil until hot, between 350-360 degrees, and begin frying okra a few at a time. Remove and let cool before eating.
