Featuring local Cannon Distillery Chai Vodka

What is it?

The Gingerbread Martini is the signature cocktail for Charleston’s Les Dames d’Escoffier’s Holiday Culinary Academy. This inaugural event will feature locally distilled Chai Vodka produced in small batches by Cannon Distillery of West Ashley.

What’s the story?

Lewis Dodson, an owner of the distillery, uses local corn grown on Edisto Island and milled by Geechie Boy Mill to produce this 100 percent corn vodka, distilled seven times.

In collaboration with Les Dame d’Escoffier member and owner of the Tattooed Moose and Voodoo Lounge, Jen Kulick, the two designed a holiday cocktail that features Cannon’s Chai Vodka and a gingerbread flavor-inspired cocktail to be served at the Les Dames Holiday Culinary Academy — an all-day workshop on Saturday Nov. 11 at the Palmer Campus of the Culinary Institute of Charleston.

What’s the price?

  • $175 to attend the Les Dames Culinary Academy where the Gingerbread Martini will be served; they can be purchased at www.ldeicharleston.org. The Holiday Academy includes six educational sessions, a continental breakfast, boxed lunch, gift bag, tastings and recipes, and the martini. Ticket sales benefit the chapter’s charity partner, One80Place, and scholarships for women in the hospitality industry.

What’s the flavor?

Think of ginger, cinnamon, clove and black peppercorn infusing the black tea essence of Cannon Thai Vodka. Now season the vodka with “Jen’s Ginger and Cardamom Syrup,” add a splash of cream, shake over ice and pour into a blackstrap molasses-drizzled martini glass.

The glass is rimmed with the ginger cookies, raw sugar crystals and cardamom.
