“I really look forward to working with restaurants in the Charleston area that need help,” says DiMaio, who succeeded Thurston in April 2014. Prior to joining the team at Stars, DiMaio worked on the line at the Ocean Room and served as sous chef at Mercato.
Heather Greene, a spokeswoman for the restaurant’s operating company, reports chef de cuisine Tyler Chavis has assumed DiMaio’s responsibilities since he left last Thursday. “We support him in this decision,” she says of DiMaio’s departure.
While Thurston Southern was most recently in the news for its contract with Union Provisions, Thurston stresses that his firm isn’t solely in the triage business. According to Thurston Southern’s website, the company is also equipped to cater, recruit staff and develop beverage programs, among other offerings.
