Andrea Margiotta is the Good Catch Coordinator at the South Carolina Aquarium and is participating in the Eat Local Challenge.
We had an eventful day enjoying a few of the perks of the Lowcountry. We started our day with delicious egg and cheese sandwiches using eggs from a local farm and then headed to the airport to pick up my aunt visiting from New Jersey.
While in North Charleston we stopped at Holy City Brewing for a pint of Pluff Mud Porter before making the drive out to Folly Beach for an ocean fix. After the wind picked up and the clouds rolled in, we decided to make a pit stop at Taco Boy for my all-time favorite nachos and a margarita, complete with a paper straw.
We ended our day by cooking locally caught triggerfish, which is an excellent seasonal and sustainable fish, that we picked up from a seafood market. We paired the sweet, white fish with homemade pasta. This was a great way to enjoy a Sunday and to give my family a taste of the Lowcountry.
