Considering how many cows Lewis Barbecue clears each week, the peninsula restaurant seems like an unlikely source for a stupendous vegetarian recipe.

But this is John Lewis’ corn pudding, a dish that rivals the pitmaster’s beef ribs and brisket in the acclaim category. Its fleecy texture and subtle chili flavor make the cheesed pudding suitable for just about any occasion, including Thanksgiving.
