Jennifer and Sam Ferrebee opened the first Verde on King Street in late 2011, refurbishing an old Bruegger’s Bagels store with brightly striped wall paint patterns and greenery — a whole lot of greenery.
It seems the couple has hit on an idea, resounding with an audience eager for healthful, light options and a dedicated salad menu.
Just this month, Verde opened its second location on Coleman Boulevard in Mount Pleasant, offering similar decor, furnishings and an abundance of fresh fruits, foliage and vegetables.
As is, Verde displays a potential similar to Ladles, the rapidly expanding soup outfit that enjoys locations in James Island, Johns Island, Mount Pleasant, North Charleston, Summerville and West Ashley, and soon in downtown Charleston on Calhoun Street. Perhaps a similar growth spurt might ensue for Verde, though the short shelf life of fresh vegetables could ultimately prove cost exorbitant.
But that’s a worry for another day.
At present, Verde offers ripe choices for its salad builds (starting at $6.95). Create your own should you wish, choosing from a lettuce base, 20-plus vegetable and fruits, cheeses and other topping choices like wasabi peas, bacon, hard-boiled eggs and dried cranberries. Add a protein or finish it with agave mustard, chipotle lime vinaigrette, wasabi honey and other dressings.
Of course, all the pickings can seem overwhelming. It might be best to try one of the signature salads already formulated by the restaurant.
The curried beet ($7.95) adds carrots, pears, goat cheese, sliced almonds and fresh mint.
The Farmers Market ($7.95) makes do with an assortment of greens, plus broccoli and hearts of palm with Green Goddess dressing, while the Cobb on King ($8.95) is more robust with roasted turkey, bleu cheese and bacon.
Try any of these tossed, chopped or even wrapped. All will undoubtedly be garden-fresh.
