Veteran restaurateur Karalee Fallert has a new concept planned for Folly Beach, and she's built just the space to house it at 106 E. Ashley Ave.
Wiki Wiki Sandbar will be a 6,500-square-foot restaurant and bar with five rooms of various themes designed and interpreted by local artists. Fallert says that she was inspired to go South Pacific because of the similarities between traditional Hawaiian plate lunches and Southern meat-and-threes.
The menu, created by executive chef Jason Dupree, will follow that pattern of slow-cooked meats with sides like rice, macaroni salad, greens and root vegetables. You'll also find a Spam slider, in honor of Hawaii's love of Spam, and pineapple Dole Whip, which is sort of like a soft-serve pineapple treat.
You can't have a tiki theme without copious amounts of rum, and Fallert has tapped Daniel Parks from San Francisco's tiki-themed Pagan Idol to help create the cocktail menu. Think fruity and tropical. A tiki bar on the top floor with views of the ocean, local art and glass sculptures promise a lively setting.
Wiki Wiki Sandbar will open June 2018.
