John Zucker likes to promote from within. The owner of Cru Cafe, Cru Catering and Purlieu recently named his longtime sous chef Rachel Blumenstock to chef de cuisine at the cafe.
Blumenstock has worked for Cru since shortly after its opening in 2002. "Rachel started with us as a lead lunch line cook," says Zucker. "Then quickly moved up to dinner lead line cook." She left Cru for a brief period to return to her home state of New York, but returned in 2011. She's been sous chef for the past six years.
Zucker says Blumenstock executes upscale comfort food at a very high level and is well liked in the kitchen.
Blumenstock says her favorite dish to prepare is gnocchi, which she makes using potato and parmesan cheese. It's served with an heirloom tomato sauce, cremini mushrooms, fresh arugula and goat cheese.
Cru Cafe is open for lunch and dinner Tuesday through Saturday at 18 Pinckney St.
