1 ounce gin
1 ounce Redbreast Irish whiskey
1/4 ounce Demerara simple syrup (see recipe)
4 dashes Fee Brothers Old Fashion Aromatic Bitters
½ ounce Zacapa 23 rum
Combine all ingredients in an ice-filled glass. Top with a float of rum.
Demerara simple syrup
½ cup Demerara sugar
½ cup water
Combine sugar and water in a saucepan over medium heat, stirring constantly until sugar is dissolved. Cool to room temperature; pour into a glass jar or other airtight container. Simple syrup will keep in the refrigerator for one week.
