Chefs participating in this project were asked to prioritize contemporary over classic, but Hominy Grill’s awareness of local culinary history is part of what makes the Cannonborough-Elliotborough restaurant so special. Chef Robert Stehling says of this recipe, “I think it indicative of what Hominy does, making a classic part of our modern lives, but it’s also a snapshot of what Charleston restaurant cooking has aspired to become: Fresh, local and heirloom.”
