Originally from Chicago, Dubczak understands the importance of a well-poured cocktail, and knows the Fat Hen's menu by heart.
The Fat Hen draws a steady crowd of both locals and newcomers who appreciate French cuisine with Charleston flair.
Q: How long have you worked at the Fat Hen?
A: Since it first opened, two and a half years ago.
Q: What is your background as a bartender?
A: I worked in a sports bar in high school, and then I started bartending at Clemson, where I attended college. When I moved here, I started at King Street Grille and then ended up at the Fat Hen.
Q: What do you love about the Fat Hen?
A: I love the locals that I see every day. It also doesn't hurt to work in a place with delicious food!
Q: How would you describe the Fat Hen's menu?
A: Lowcountry-French. It's classic French cuisine but also inspired by the flavors of the area. So you have your coq au vin and your duck confit, but you also have your blue cheese and bacon coleslaw.
Q: What's your favorite food item here?
A: I love the short rib, the seared grouper and the duck confit. Those are my favorites.
Q: What cocktail are you known for making?
A: Well, we actually have a drink called the Fat Hen. It's Kahlua, Grand Marnier, Firefly vodka, OJ and pineapple juices. But even more popular than that is our Lowcountry Lemonade. It has Firefly vodka with freshly squeezed lemon and lime juices, Cointreau and Sprite.
Q: What's a popular shot?
A: We don't serve many shots here. But I would say either the Van Gogh Espresso Vodka or, of course, Grand Marnier, since it's Charleston.
Q: What Charleston establishment do you visit in your spare time?
A: For lunch, I like the Glass Onion because their ingredients are natural. For drinks or watching sports, I like the King Street Grille out in Freshfields.
Q: What celebrity would you love to serve a drink?
A: The president. That would be cool. I'll set my goals high.
