DO YOU KNOW: David Matthew Bolus

Thursday, May 22, 2008

David Matthew Bolus

David Matthew Bolus

BIRTH DATE AND PLACE: September 1977, Louisville, Ky.

RESIDENCE: West Ashley.

OCCUPATION: Executive chef/owner of Red Sky Grill on Johns Island near Seabrook Island.

FAMILY: Wife Kelly. We have three dogs and one cat. Mother and father, no siblings. My wife has one sister who is married with two children.

EDUCATION: Bachelor's in finance from the University of Tennessee-Knoxville; Grand Diplome de Cuisine et de Patisserie Le Cordon Bleu in London.

THE MOST FULFILLING ASPECT OF MY JOB: Making people smile with great food and excellent service.

THE MOST CHALLENGING ASPECT OF MY JOB: Dealing with customers.

WHAT I HOPE TO ACCOMPLISH IN THIS JOB: I hope to bring all the amenities of fine dining to an everyday restaurant, to create a destination location that customers come to on a regular basis.

FIVE WORDS THAT BEST DESCRIBE ME: Passionate, focused, driven, relaxed, fun.

TALENTS/HOBBIES: Cooking, woodworking and gardening.

THE BIGGEST CHARLESTON COUNTY ISSUE: The lack of focus on what is important for our city. We need to quit worrying about meaningless issues such as how much noise a cruise ship makes and start focusing on the more important things such as crime.

FAVORITE LOCAL PLACE TO EAT: McCrady's.

SOMETHING IMPORTANT LIFE HAS TAUGHT ME: Focus on the positive in life (i.e., friends and family). The rest is meaningless and will quickly be in the past. Friends and family are forever.

ACCOMPLISHMENT OF WHICH I AM MOST PROUD: Owning my own restaurant by the age of 30.

MY FAVORITE WAY TO RELAX OR DE-STRESS: Eating a great meal.

FANTASY DINNER GUESTS: Chefs David Bouley, Eric Ripert and Gordon Ramsay.

ONE THING I MUST HAVE IN MY FRIDGE AT ALL TIMES: Duck Fat (or even better Foie Gras Fat).

FAVORITE SOUND: I love the sound of a big city: London or New York.

INTERESTING FACT ABOUT MYSELF: I was a stockbroker before I was a chef.

THE BEST COMPLIMENT I RECEIVED LATELY: After eating a four-course dinner that I made for my wife and some friends, my wife's friend announced that she needed to marry a chef.

THINGS THAT BRIGHTEN MY DAY: Lavender in any way I can find it, charcuterie, the smell of fresh herbs and rain.

THE FIRST THING I NOTICE ABOUT PEOPLE: Their attitude toward others.

THE OLDEST THING IN MY FRIDGE: Bottle of 1934 Nieoport Port.

FAVORITE EXPRESSION: Never wish your time away.

SOMETHING MY PARENTS ALWAYS TOLD ME: Think about what you say before you say it. Easier said than done.
