Torii Mor is a small winery that focuses on small lots of vineyard-designated, handcrafted Pinot noir. I felt the ripe red fruit components and hints of toasty oak would work wonderfully with the salt and pepper brisket and herbal components of the Hatch crema and micro cilantro. The medium body will stand up to the brisket without overpowering the aromatics of the cilantro and onion.
