Why I poured that wine

Great chardonnay from a cold climate has the acidity and balance to age well, allowing the wine's various features to meld into a cohesive, singular identity. With a little time, "bottle bouquet" also develops, and nutty, waxy aromas make for a more complex and subtle experience. The 06 Estate Chardonnay has significant mineral and toasty notes. This profile should play well with some of the flavors in this dish, especially the toasted bread crumbs and anchovy.
