For breakfast, I had a great big honking bowl half-filled with Quaker oats and half with that Ezekiel 4:9 stuff that's really good. I put some bananas, raisins, berries and almond milk in there. I like putting things in my body that are good for it.
Lunch, I had a big salad, half-filled with spinach and half-filled with kale; mushrooms; cherry tomatoes, beets, mandarin oranges; and some black beans. I used the mandarin orange juice for dressing.
For dinner, I cooked up whole wheat pasta. I put on top of that squash, zucchini, spinach. I put some sweet potato on there. I put a lot of spices on there: oregano, basil, just whatever I've got in the cabinet. It was a lot of food.
I like to lift in the gym and people are constantly asking where do I get my protein. Truth is, elephants and rhinos, the biggest animals on the planet, get their protein from plants. I became a vegetarian in college, but I've only been a vegan for four years. Knowing what I know now, I wish I'd done it right away.
